Storage of fruits and vegetables in a controlled atmosphere (ASHRAE Journal. October 2002. p. 72)
Refrigeration Technology ›› 2003, Vol. 92 ›› Issue (10) : 36 -36.
All fruits and vegetables are living breathing organisms with individual requirements for the oxygen and carbon dioxide content in their storage environment. With normal air composition, i.e. 21% O2 and 78% nitrogen and other gases, even at low temperature (4°C) fruits and vegetables "die" after a few days of storage. By controlling the parameters of the gas environment in the storages, it is possible to extend their shelf life in a fresh state.
